Santa Cruz coffee entrepreneur Eddie Alaniz turned his pandemic-born business, Coffee Conspiracy Co., from a small East Cliff Drive cart into a backstage staple for some of the world’s biggest touring acts, thanks to persistence, lucky breaks and a Santa Cruz connection with Live Nation. In 2025, his coffee cart served at 17 major concerts for artists like Billie Eilish, Kendrick Lamar and Metallica, providing both financial stability and a springboard for expanding his café and brand.

Our 3rd drop of 2025 has been declassified. Case File 28 is a single origin washed coffee from Nariño Colombia. This coffee immediately stood out to me; strawberries, creamy vanilla, sweet cinnamon. It’s a dense, sweet, clean cup. A perfect representation of what Nariño can do.

Green Label Drop 001: Ethiopia Gesha - Our Rarest Coffee Yet

The Green Label has officially been declassified. These will be our rarest single origin coffee releases yet! We got our hands on a Gesha from Ethiopia that has undergone Carbonic Maceration. Carbonic maceration, borrowed from the red wine world, is a fermentation process where whole coffee cherries sit in a CO₂-filled tank, pushing out oxygen and breaking down sugars over days or weeks.
